The dish that made me fall for it was actually this kale, white bean, and escarole soup. (Heads up, I think the recipe calls for longer sauteing times than necessary. Also too much chicken broth; I replaced some of that with water.)

I like your blanching technique and will have to try that next time. Since kale is so tough, do you blanch it for longer than other leafy greens?

Also I assume you have tried kale chips? I didn't love them as much as I thought I would, but it is a good way to use up excess kale.

My favorite preparation method for kale was, um, chewing.
